Sometimes in the Wine Trade an importer gets lucky. I have always been in love with the flinty taste of Chablis, with no oak, and just pure chardonnay, and when my friend Alex Gambal introduced me to Monsieur and Madame Pautre in Ligonelle, I knew that I found what I was looking for, during the last 20 years. Some producers end up with the best terroir, and can get the most out of their land. Here is one of them. Alain inherited these vines from his father, on the edge of Chablis. Long thought to be the poorest soils, and assigned the “Petit Chablis” AOC, now believed to be as good as some Premier Crus. M. Pautre is the “king” of the Petit Chablis AOC, but never exported to the United States. Not speaking any English he preferred to sell some of his production to negotiatants, and let them do the marketing and paperwork. Not owning a bottling line, he brings his production to the Village of Prehy where a friend bottles for him, and alas his wines are finally available in the States. 100% Stainless Steel fermented Chardonnay, 50% Malo gives it fresh acidity. Nose of citrus, and minerals, with a crisp long finish with a hint of apples and butter.
