Cave Spring Pinot Noir
Made with 93% Pinot Noir and 7% Gamay grapes grown on selected vineyards in the western stretches of the Niagara Peninsula, lying at varying elevations close to the shoreline of Lake Ontario; limestone and shale laced clay combine with exposure to moderating onshore breezes to produce an elegant Pinot Noir with earthy nuances and silky texture. On the nose, dried currants, cedar plank and maraschino cherry over hints of forest floor and grated nutmeg. The palate is medium-bodied with black tea and black cherry up front; followed by tannins and concentrated black raspberry and wild blueberry fruit; the finish is sweet and savory with overtones of purple plum preserve mingling with hints of mint, pine needle and forest mushrooms.
