Marras Vesper Red Blend

Vesper is a blend of Grenache, Shiraz, Cinsault and Cabernet Sauvignon, sourced from older bush vines. Early in the growing season, the sun-exposed bunches are carefully removed, leaving the shaded bunches to ripen more evenly. This helps preserve natural acidity while encouraging balanced and gradual ripening.

The grapes are harvested by hand in crates during the early morning, keeping the fruit cool and fresh on arrival at the cellar. Each variety is handled separately and de-stemmed with 20% whole bunches retained. Fermentation is approached gently, with light extraction through one gentle cap splash in the morning and one in the evening, preserving the natural fruit character and freshness of the wine.

After fermentation, only the free-run wine is selected for maturation. It is matured separately in larger, older barrels for 12 months, allowing the wine to develop depth, texture and complexity while keeping the influence of oak subtle. The individual components are then carefully blended to create Vesper, with the aim of finding harmony between the lighter and darker red cultivars.

A beautifully balanced red blend that brings together light and dark red fruit in harmony. Aromas of ripe cherries and plum lead into a layered palate with subtle spice, juicy fruit and refined tannins. The wine has both freshness and depth, with the brighter red-fruit character of Grenache and Cinsault balanced by the darker fruit and structure of Shiraz and Cabernet Sauvignon. Elegant, layered and balanced, with vibrant fruit, subtle spice and a long, refined finish.
