Marras Vixen Chenin Blanc
Vixen is made from old bush-vine Chenin Blanc. Early in the growing season, sun-exposed bunches are removed, leaving the naturally shaded bunches to ripen more evenly. This helps retain higher natural acidity while allowing the fruit to develop concentration and balance.
The grapes are hand-harvested in crates during the early morning and brought to the cellar cool and fresh. The fruit is whole-bunch pressed directly into concrete, where it undergoes a slow, cold fermentation. The wine is then transferred to larger, older barrels to complete the final third of fermentation in barrel.
After fermentation, Vixen is matured on its lees for 12 months, building texture, depth and complexity while allowing the natural fruit and acidity to remain at the center of the wine.
A refined and layered Chenin Blanc with aromas of ripe pear, honey and delicate baking spice. The palate is textured and concentrated, balancing generous stone and orchard fruit with fresh natural acidity. Subtle honeyed notes add richness, while gentle baking spice brings complexity and length. Rich yet fresh, textured yet elegant, with layers of pear, honey and spice carried by vibrant acidity.
